Eggs with Ground Beef and Salsa image

Number Of Ingredients 10

Tomato and de Arbol Chile Sauce or purchased tomatillo salsa
2 teaspoons olive oil
3/4 pound lean ground beef
4 green onions, , sliced crosswise
1 medium tomato, peeled and finely chopped
3/4 teaspoon salt, or to taste
1/4 teaspoon freshly ground pepper, or to taste
1 tablespoon unsalted butter
6 large eggs, beaten
1/2 cup sour cream

Steps:

  • 1. Prepare the salsa, if using homemade. Then, in a large nonstick skillet, heat the oil over medium heat and cook the meat, stirring, until brown and cooked through, about 4 minutes. Add the onions, tomato, 1/2 teaspoon of the salt, and the pepper. Cook, stirring, until the tomato juices are bubbling, about 3 to 4 minutes. Reserve in the pan off heat. 2. In another skillet, heat the butter over medium heat until it foams. Add the eggs and remaining salt. Cook, stirring slowly, to scramble. When the eggs begin to hold together, in about 2 to 3 minutes, transfer to the ground beef mixture. Stir gently to combine. Divide among 4 serving plates. Drizzle each serving with a portion of sour cream and about 1 tablespoon of green salsa. Pass extra salsa at the table.From "1,000 Mexican Recipes." Copyright 2001 by Marge Poore.
