Egg in a muffin image

The first time I tried this I figured the muffin would end up hard, but just the opposite, it is very moist and tender. This is a neat way to serve your family breakfast, and it makes a great breakfast on the go.

Number Of Ingredients 8

- **english muffins
- **large or med eggs
- **butter, softened
- **ham or other breakfast meat, chopped, opt
- **cheese, opt
SAUSAGE AND CHEESE MUFFIN
- **cooked mini sausage patties
- **cheese (american slices)

Steps:

  • Using a hard round hollow object, made a hole in the middle of your English Muffin, don't go all the way through to the bottom. Remove center. Brush or spread softened butter or margarine around inside of hole and around top side of muffin.
  • Crack and place one room temp egg into each center. Top with chopped ham or any other breakfast item you like. Bake 375° for 15 min. for soft yolk.
