Steps:
- 1. Brush oil into a 9x13 baking dish
- 2. Thaw frozen hash browns in microwave then spread on bottom of baking dish. Bake for 20 minutes at 350 then set aside
- 3. Cut bacon into small pieces and fry until crisp then drain and set aside
- 4. Chop vegetables and sprinkle evenly over hash browns
- 5. Beat eggs and milk then add cheese, seasoning, and bacon bits
- 6. Pour egg mixture over vegetables
- 7. Bake for 45 minutes at 350 or until eggs are firm. Cover with foil during baking if edges start to brown
- 8. Cool slightly then cut and serve
