Edamame with Mustard Vinaigrette image

Number Of Ingredients 8

1 1/2 Tbsp red wine vinegar
1 Tbsp Dijon mustard
1/2 tsp sea salt
1 tsp olive oil
1 lb frozen, shelled edamame, thawed
1 cup thinly sliced red onion
1/2 cup chopped celery
1 Tbsp chopped parsley

Steps:

  • Combine first three ingredients, stir with whisk and whisk in oil slowly.
  • Cook edamame in boiling water about 4 minutes. Add onion and celery. Cook 1 more minute. Drain well.
  • Add mixture to vinaigrette and mix well. Stir in parsley then chill for 1 hour before serving.
