Easy Vegetable Rice Medley image

quick and easy to fix; after a day of work

Number Of Ingredients 8

1 Tbsp canola oil
1 c chopped onion
1/2 c chopped carrots
1/2 c chopped celery
1/2 c chopped red pepper
1 can(s) chicken broth
1 1/2 c minute rice, uncooked
1 c frozen peas

Steps:

  • 1. Heat oil in nonstick skillet, add onions, carrots, celery and peppers; cook 5 min. or until tender
  • 2. Add broth; bring to boil
  • 3. Stir rice and peas; cover. Simmer 5 min. Remove from heat. Let stand 5 min. before serving
