Easy Tortellini Soup image

Such an easy fix. Worked late and don't have time to fix a big dinner? That's what this easy soup is for :) Happy Cooking!

Number Of Ingredients 6

1 can(s) tomatoes, canned italian style with juice
5 1/2 cup(s) vegetable broth
1 clove(s) garlic, minced
10 ounce(s) spinach, riced and chopped
1 package(s) prepared cheese tortellini
2 tablespoon(s) grated parmesan cheese

Steps:

  • Bring large pot of lightly salted water to a boil. Combine tortellini, spinach, and garlic and bring to a boil; reduce slightly and boil for 7 minutes. Drain and add tomatoes and broth. Simmer for 20 minutes and serve.
