I love coleslaw and this one is so colourful. You can double the recipe if you wish.

Steps:
- 1. Shred the carrots and cabbage and put into a medium size bowl.
- 2. Combine the other ingredients in a small sauce pan and warm until the Xylitol is dissolved.
- 3. Cool the dressing
- 4. Pour "some" of the dressing on the cabbage/carrot mixture and stir making sure it's all coated
- 5. If you have left over dressing you can freeze it.
- 6. Enjoy!
