Steps:
- 1. Cook the rice according to directions on package. Set aside to cool.
- 2. In a medium saucepan, combine the sugar and cornstarch. Add milk and eggs, mixing well.
- 3. Stir in the rice and bring mixture to a boil, stirring constantly. Reduce heat and cook for 20 minutes, stirring frequently.
- 4. Remove from heat and add the butter and vanilla, stirring until butter is melted.
- 5. Pour into serving bowls and sprinkle with cinnamon. Serve warm.
