Easy Flatbread image

I saw these made on a cooking channel and it looked so easy I tried them for company. I served the flatbread with spreadable cheese like Boursin and topped with a Cranapple compote. They are all different shapes so are not only rustic looking, they taste great.

Yield 10-12 Flatbread

Number Of Ingredients 8

1 cup flour
2 tablespoons olive oil
1 pinch salt
2 -3 tablespoons water
2 tablespoons onions, grated
olive oil
sea salt
dried rosemary

Steps:

  • Place flour in a bowl with olive oil and using your fingers combine to make crumbly.
  • Add grated onion, salt and 2 Tbsp water, mixing with fingers to combine, adding an extra sprinkle of water at a time if required.
  • Knead mixture to form dough.
  • Break off small pieces (about 1-1/2 inch) and using a rolling pin flatten to about 1/8 inch.
  • Place pieces on well oiled cookie sheet, brushing the tops lightly with more olive oil, then sprinkle with sea salt and rosemary or thyme.
  • Bake at 350 degrees for 10-15 minutes until nicely browned.
