EASY CRUNCHY CHICKEN FINGERS image

These are some of the most delicious chicken fingers I have ever tasted! They almost sound too simple to be so good, but that's the beauty of this recipe: tasty and so easy to prepare! Don't miss this one! 02-02-2020

Number Of Ingredients 4

2 boneless, skinless chicken breasts cut into strips
2 Tbsp extra virgin olive oil
1 pkg saltine crackers, crushed
2 eggs, beaten

Steps:

  • 1. Beat the eggs in a small bowl and set aside. Place the crushed crackers into another bowl
  • 2. Heat the oil in a large heavy skillet over medium heat.
  • 3. Carefully dip each chicken strip into the eggs and then into the crushed cracker crumbs. Be sure to coat well on both sides.
  • 4. Place the coated chicken strips into the hot oil.
  • 5. Turn chicken occasionally to insure browning on both sides. Cook about 20-30 minutes or until fork-tender.
  • 6. Drain on paper towels and serve.
