EASY CREAMY ENCHILADAS image

Number Of Ingredients 10

2 tsp evoo
2 tsp minced garlic
1 tsp finely grated lime zest
1 jar salsa verde
1 bar cream cheese, cubed
2 c shredded cooked chicken
1/2 c shredded cheddar or monterery jack
1/4 c chopped fresh cilantro
6 flour tortillas
1 large tomato, diced

Steps:

  • Heat oven to 350 F. Heat a large skillet over medium heat, add olive olil and cook garlic and lime zest for 30 seconds. Add salsa verde and cream cheese, stir until blended. Reserve 1 cup of the sauce, set aside. Remvoe swkillet from heat, add chicken, half of the cheese and half of the cilantro. Add 2-3 tb of the reserved sauce to the bottom of a 9x12 dish. Make enchiladas. Cover with remaining sauce and cheese. Bake 20 min. Top with cilantro and tomatos.
