EASY CHOCOLATE PECAN PIE image

3 eggs
1 cup brown sugar, packed
1 cup corn syrup, light
2 T butter, melted
1 t vanilla extract
1 1/2 C Peacan, coarsely chopped
1/3 C semi-sweet mini chocolate chips
1 9-inch unbaked pie crust

Steps:

  • Preheat oven to 350 degrees F In a medium bowl, beat eggs slightly with a wire wisk. Stir in sugar, corn syrup, butter and vanilla, until blended. Stir in pecans and chocolate chips. Pour mixture into pie crust. Protect exposed crust of pie with strip of tin foil. Bake 55 to 60 minutes, but check at 50 minutes as oven temperatures vary. Place a sheet of foil on pie if the pecans begin to over-brown. Pie is done when knife inserted halfway between center and edge comes out clean.
