EASY BLUEBERRY CRISP image

Found this recipe in a recent magazine and knew I had to add it to my collection. It will go nicely with my apple crisp and my peach crisp. Love any fruit crisp or cobbler! Recipe: BHG.com Photo: Myrecipes.com

3 Tbsp all purpose flour
2 Tbsp granulated sugar
6 c fresh blueberries
1/4 c lemon juice
1 c packed brown sugar
3/4 c all purpose flour
3/4 c quick-cooking rolled oats
1 1/4 tsp ground cinnamon
1/2 c (1 stick) cold butter
vanilla ice cream, for serving

Steps:

  • 1. In a large bowl, stir together the 3 Tbsp. flour and granulated sugar. Add blueberries and lemon juice; toss gently to combine. Spread berry mixture evenly in an ungreased 3-qt. rectangular baking dish; set aside.
  • 2. For topping, in a medium bowl, combine brown sugar, the 3/4 cup flour, the oats, and cinnamon. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Sprinkle topping evenly over berry mixture.
  • 3. Bake, uncovered, in a preheated 375-degree oven about 30 minutes or until topping is golden brown and edges are bubbly. Cool on a wire rack about 45 minutes.
  • 4. Serve warm with vanilla ice cream. Enjoy!
