EASY BISTRO CHICKEN image

Number Of Ingredients 14

2 T olive oil, divided
4 skinless boneless chicken breasts
2 c. chopped onion
4 garlic cloves, minced
1 c. chopped celery
1/2 chopped fresh basil
1/2 c. chopped fresh flat leaf parsley
1/2 c red wine vinegar
1/4 c. sliced green olives
1/4 c. capers
1 T sugar
2 bay leaves
1 (28 oz) can Italian tomatoes
8 c. cavatappi

Steps:

  • 1. Heat 1 1/2 tsp oil in large skillet. Add chicken brests to pan:saute for 2 min. on each side or until browned. Remove from pan. 2. Add 1 1/2 tsp oil & saute onion, garlic for 5 min. Add basil & next 8 ingredients (basil thru tomatoes). 3. Return chicken to pan;bring to a boil. Cover, reduce heat, & simmer 20 min. 3. Uncover & simmer 25 min. or until chicken is tender. Discard bay leaves. Serve w/ pasta. Calories 406 1/2 c sauce & 1 c. pasta
