All you need is one skillet to cook these, it's so easy and delicious. You can also use orange preserves instead of the apricot.

Steps:
- Spray a lg skillet w/ olive oil cooking spray. Place over medium-high heat. Add chops and cook for 6 mins on each side.
- Remove chops from skillet. Add onion to pan, saute for 4 mins. Stir in preserves, soy sauce and garlic. Cook, stirring, until thickened. Add pork to pan and turn to coat. Sprinkle w/ green onions before serving.
