Steps:
- Heat oil in a pan on medium heat
- Dice the pepper and onion. Mince the garlic clove.
- Add your pepper and onion to the pan. Sauté until softened then add the garlic.
- Once softened, pour in a small can of crushed tomatoes. You want enough to fill the pan.
- Season with paprika, cumin, salt and pepper then mix it all together.
- Turn the heat down to low and place a lid over the pan to let the tomato base come to a slight boil.
- Once boiling, remove the lid and create small dips/wells in the sauce using a spoon.
- Crack the eggs into these areas then cover with a lid until the egg whites set.
- Once the eggs are cooked to your liking, take off heat and sprinkle with chili flakes, fresh parsley, and feta cheese.
- Serve with pita, toast, or bagel if desired and enjoy!
