Easter Bunny Mashed Potatoes image

These potatoes are nice and creamy with a pop of sweetness from the carrots. We love the added color the carrots give this dish too. This would make a great side dish with any Easter dinner.

5-7 large potatoes - peeled & cut into chunks
1/2 pkg TraderJoes frozen carrots rustica (chopped up yellow & orange carrots
1 tsp salt
1/2 tsp pepper
1/4-1/3 c sour cream
3-4 Tbsp butter or margarine

Steps:

  • 1. Put chopped potatoes & carrots in med/lg saucepan. Cover with warm or hot water and add a pinch of salt.
  • 2. Bring to a boil. Cook until potatoes are soft enough for a fork to go through easily - 25-35 minutes.
  • 3. Drain and return to pan. Add sour cream, butter, salt & pepper. Mash with a masher or electric mixer until there are only small pieces of carrots in smooth potatoes.
  • 4. Serve to family & a bunny if you have one! If not, invite a bunny to dinner!
