DUCK WITH ORANGE MARMALADE SAUCE image

1 free range duck
2 stems of marjoram
2 T. butter
salt
pepper
1/2 cup orange marmalade
2 oranges
2/3 cup stock
sugar to taste
4 T. parsley

Steps:

  • -preheat oven to 350F. -remove excess fat from vent end of duck -season and tuck marjoram in cavity -spread with butter and then cover with marmalade -juice the oranges and add to roasting pan with stock -cook for 1 1/4 to 1 1/2 hr. depending on size of duck. -transfer to serving dish to rest Meanwhile boil the up the juices and marmalade. Taste, add more marmalade if necessary, adjust seasoning and add parsley.
