Down Home Southern Oyster Stew image

I've been on the lookout for a 'traditional' oyster stew recipe to make for Christmas Eve. I think this is it! Prep time is next to nothing if you buy your oysters already shucked!

Number Of Ingredients 8

1 pt oysters, with liquid
8 Tbsp unsalted butter (1 stick)
1/2 c shallots, minced
1 c light cream
3 c whole milk
1/2 tsp salt
to taste cayenne pepper
additional butter for serving

Steps:

  • 1. Saute shallots in butter.
  • 2. Add milk and cream, and simmer until almost boiling.
  • 3. Season with salt and pepper.
  • 4. Add oysters and liquid. Simmer until edges curl.
  • 5. Serve in individual bowls with a pat of butter on top.
