Number Of Ingredients 16

1 pound dried pinto bean
1 large ham bone , or 2 smoked ham hocks, cracked
2 onions , chopped
3 garlic cloves , minced
2 bay leaves
1 teaspoon dried oregano leaves, crumbled
1 teaspoon ground cumin
1 tablespoon chili powder to taste
1 pinch sugar
1 pinch crushed red pepper flakes
1 water to cover
1 (10-ounce) can diced Ro-Tel tomatoes with green chiles
1 (16-ounce) can tomato with juice, broken up
1 canned jalapeƱo pepper , chopped, to taste
1 salt and pepper
1 (12-ounce) can beer

Steps:

  • Rinse beans, discarding any bad ones, and place in large pot. Cover with water and soak overnight or bring water to a boil; boil 2 minutes; remove from heat, cover and let beans soak one hour. Discard water, rinse beans with cold water and drain. Place beans in pot with all other ingredients. Bring to a boil, reduce heat until liquid barely simmers and simmer, partially covered for 3 - 4 hours, until beans are very tender. Add water and beer during cooking, as needed, to prevent sticking and scorching. Remove and discard bay leaves. Adjust seasonings while cooking, if necessary.
