Double The Streusel Coffee Cake image

I found this recipe over at Food.com(A.K.A. "ZAAR "),and the lady by the name of Hazeleyes gave me permission to post the recipe here.I sure hope you enjoy it as much as I have.The recipe name is hers but I changed the directions a bit to make it easier.Posted here on June 8th.,2011. Number Of Ingredients 13

1 1/2 c all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
3/4 c sugar
1/4 c vegetable oil
1 large egg
3/4 c milk
1/2 tsp vanilla
STREUSEL MIXTURE
3/4 c brown sugar
2 1/2 tsp cinnamon
4 Tbsp flour
3 Tbsp butter,melted

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. Mix together streusel ingredients and set aside.
  • 3. In a large bowl, sift together the flour, baking powder and salt then add the sugar.
  • 4. Blend the 1/4 cup oil into the flour and sugar mixture until it is like cornmeal texture.
  • 5. In another bowl, combine the egg, milk and vanilla.
  • 6. Add to the flour mixture and with an electric mixer on low,mix until just combined.
  • 7. Pour 1/2 mixture in a greased 8x 8 inch pan.
  • 8. By teaspoonfuls,dot half of streusel ingredients over batter.
  • 9. Pour remaining batter on top of the streusel,then by teaspoonfuls dot remaining streusel topping over the batter.
  • 10. Bake in a 350 degree oven for 25 minutes. (p.s. you could make a powdered sugar glaze,but personally I don't think you need it.
