4 tablespoons butter
1 onion, diced
1/2 cup celery, sliced
4 tablespoons flour
3 cups milk
1 cup shredded cheddar cheese
1 cup gouda cheese, shredded
salt, pepper
5 drops hot sauce
chives (to garnish)

Steps:

  • Melt butter in saucepan.
  • Add onion and celery, stir to soften.
  • Add flour, to thicken.
  • Slowly whisk in milk until smooth.
  • Bring to a simmer.
  • Add cheeses stirring until blended.
  • Add salt& pepper to taste and garnish with chives.
