DISHWASHER SALMON WITH CILANTRO SAUCE image

Number Of Ingredients 17

2 Tbsp olive oil
4 6-oz slmon fillets
4 Tbsp freshly squeezed lime juice
salt and pepper to taste
Heavy duty aluminum foil
Sauce
1 Tbsp butter
1 leeek (white part only, chopped
1 shallot minced
1 jalepeno chili, seeds removed and diced
2 cloves garlic, minced
1 1/2 cup chicken stock
2 cups fresh cilantro
3 Tbsp freshly squeezed lime juice
1/4 tsp salt
1/2 tsp black pepper
3 Tbsp sour cream

Steps:

  • Cut 2 12 inche pieces of foil Grease the shiny side of foil with the oil place 2 fillets side by side on each square and fold up te outer edges. Pour 1 Tbsp lime juice over each fillet. Season with salt and pepper. Fold and pinch the aluminum foil extra tightly to create a watertight seal around each pair of fillets. Place the foli on the top rack of the dishwasher. run the diswasher for the entire wash and dry cycle. Sauce Melt butter in saute pan. Add leek, shallot, jalepeno, and garlic and saute 5 minutes. Reduce heat and add stock. Simmer uncovered for 15 minutes. Remove from heat and allow to cool. Transfer to a food processor and add cilantor, lime juice, salt and pepper and puree until smooth. Add sour cream and pusle until mixed. Serve with salmon.
