Dirty Rice (My version) image

Years ago, I heard about Dirty Rice and thought it sounded good, but any recipe I found used organ meats to make it "Dirty." I don't like organ meats, so I decided to make my own version that would be more appealing to more people. The last time I made this, my husband suggested that I add kale to it. He is into kale right...

1 1/2 c rice
3 c beef stock
1 lb ground beef
1 onion, chopped
5 clove garlic, crushed
1/2 tsp cayenne pepper
1 bag(s) peas, or other frozen vegetable
salt and pepper, to taste
water, as needed
4 Tbsp butter

Steps:

  • 1. Cook the rice in the beef stock. I have used long grain and basmati rice. Both work great.
  • 2. Cook the ground beef to remove the pink, add the onions and garlic and continue cooking to soften the onions. Once the onions are softened, add the rice and peas. Cook until the peas are warmed. Add the cayenne pepper and salt and pepper to taste. If you let it sit a little while on low or simmer before serving, you may need to add a little water so it doesn't burn on the bottom.
  • 3. Just before serving, put the butter on top and let melt. I usually cut it up and distribute over the rice, then one last stir.
  • 4. This is a one pot meal that I serve with a salad and bread.
