Different Pot Roast image

I had a roast that needed to be cooked today and I was tired of the usual set of recipes I use. I decided to just look around the kitchen and use things I wouldn't normally use in a pot roast. It's a little bit sweet, a little savory and as easy as dumping it all into a slow cooker. I'm here writing it down tonight because hubby took two bites, said "is this new?" and then said go write it down so you don't forget!

Number Of Ingredients 12

3 pound(s) beef roast
1 - envelope onion soup mix
3/4 cup(s) dried cranberries (or prunes)
1 - medium bell pepper, diced
1/4 cup(s) red wine vinegar
- 1 sprig fresh rosemary (1/2 tsp)
3 - fresh roma tomatoes, peeled and diced
1/3 cup(s) pitted green olives
1 tablespoon(s) capers
1/2 cup(s) water
4 - medium red potatoes, cut in large chunks
- salt and pepper

Steps:

  • Place everything in a crockpot or slow cooker. Cover and cook on low for 8 hours or high for 6 hours. The meat should be fork tender.
