1 apricot, halved and soaked in brandy
1/4 teaspoon brown sugar
6 ounces champagne or sparkling wine
1/2 vanilla bean

Steps:

  • Place the apricot half and brown sugar in a champagne flute. Pour over with champagne or sparkling wine. Stick in half a vanilla bean.
