Steps:
- 1. Spray a large microwave safe coffee mug with non-stick cooking spray.
- 2. Add vegetables and microwave 1 to 2 minutes until softened.
- 3. Blot excess liquid from vegetables, return to cup. Add egg substitute, stir and microwave for 1 minute.
- 4. Add ham and cheese and lightly stir. Microwave an additional 45 to 60 seconds until scramble is just set. Let cool and enjoy!
