Debbie's Potato Casserole image

One of my dance club friends who is a very good cook, gave this recipe to me. Everytime I prepare this dish, I think of her and how beautifully she and her husband dance our favorite specialty dance called the 'Night Club Two Step'.

Number Of Ingredients 9

1 lb package frozen diced hashbrowns (16 oz.)
1 small onion, chopped
1 can(s) cream of mushroom soup
1/2 can(s) water
8 oz cream cheese, softened
1/4 lb butter (1 cube)
1/2 boneless chicken breast, cooked and diced
--- salt and pepper to taste
--- grated cheddar cheese

Steps:

  • 1. Saute onions in butter. Mix the soup with 1/2 can water & whisk together with the cream cheese. Add to the onions in skillet, stir until melted and smooth. Add the potatoes and chicken.
  • 2. Pour into a buttered 8 X 11 baking dish and bake at 350 degrees for 45 - 50 minutes. The top should be nicely browned. Top with cheddar cheese, return to the oven until cheese is melted, about 5 minutes.
