Jello With Cucumbers and Cottage Cheese image

This vegetable salad mold is a nice accompaniment to a buffet or dinner. It's very refreshing, crunchy. and not too sweet thanks to the lemon juice and onion. Recipe was found a Cooks.com. Cooking time is actually chilling time.

Number Of Ingredients 6

1 (3 ounce) package lemon Jell-O gelatin
1 cup water, boiling
1 teaspoon onion, finely grated
1 -2 tablespoon lemon juice
1 cup cream-style cottage cheese, small curd (drained)
1 cup cucumber, finely chopped (I used 1/2 pf an unpeeled English cucumber ~ the one that comes wrapped in plastic wrap)

Steps:

  • In a medium or large bowl, dissolve jello in boiling water. Add onion and lemon juice. Chill until partially set, 20 to 30 minutes.
  • Beat at high speed until light and fluffy. Fold in cottage cheese and cucumbers.
  • Pour into mold or 8-inch square pyrex baking pan. Chill 4 hours or overnight.
