DARK DATE NUT BREAD image

1/2 cup boiling water
1/4 cup light raisins
1/4 cup dark raisins
1/2 cup chopped dates
1 1/2 tablespoons butter
3/4 teaspoon soda
3/4 cup plus 2 tablespoons flour
1/2 cup sugar
1/4 teaspoon salt
1 egg
1/2 teaspoon vanilla
1/4 cup chopped nuts

Steps:

  • Heat oven to 350F. Pour boiling water over raisins, dates, butter and soda; put aside. Measure flour by dipping method or sifting. Mix flour, sugar and salt; add fruit mixture and remaining ingredients. Beat well. Pour into a greased and floured "1-pound" coffee can. Bake 60-70 minutes. Note: Makes 8 muffins (bake 25-30 minutes). A doubled recipe fits a 9x5-inch loaf pan and bakes in the same amount of time. Freezes nicely.
