Steps:
- Poach pears: peel, cut in 1/2, cook 15 min, cool in liquid
- Almond cream: mix together.
- Pastry: roll out pastry to 9x15 rectangle. Trim, 1/8" thick 4.5" squares, place on parchment & freeze at least 15 minutes.
- Assemble: preheat to 425. Spread 2 tsp almond paste per square, blot pears & put on top.
- Bake: 10 minutes. Put another pan below & lower to 375. Bake another 15 minutes
- Can be made early in day. Reheat @ 375 for 5 min.
