Dahlia pear tart image

Number Of Ingredients 10

3 pears
4 cups Water
2 cups Sugar
1 stick Vanilla
3 tablespoons Almond paste
2 tablespoon Sugar
1.5 tablespoons Butter
1 Egg Yolk
1 pound Puff Pastry
1 jar Caramel sauce

Steps:

  • Poach pears: peel, cut in 1/2, cook 15 min, cool in liquid
  • Almond cream: mix together.
  • Pastry: roll out pastry to 9x15 rectangle. Trim, 1/8" thick 4.5" squares, place on parchment & freeze at least 15 minutes.
  • Assemble: preheat to 425. Spread 2 tsp almond paste per square, blot pears & put on top.
  • Bake: 10 minutes. Put another pan below & lower to 375. Bake another 15 minutes
  • Can be made early in day. Reheat @ 375 for 5 min.
