Cut out cookies image

These are without a doubt the best cut out cookies I have ever made. I've tried a lot of variations but I always come back to this one! Try it with orange zest once too..I think you'll like it!

3 1/2 cup(s) flour, divided
1 teaspoon(s) baking powder
1 teaspoon(s) baking soda
1/8 teaspoon(s) salt
- zest of 1/2 lemon or orange
2 stick(s) land o lakes margarine
2 - eggs
1 1/2 cup(s) sugar
1 teaspoon(s) vanilla extract

Steps:

  • In a medium sized bowl, combine flour, salt, baking poweder, baking soda and lemon or orange zest. Work in 2 sticks of Land O Lakes margarine with your hands. In s separate bowl of a stand mixer fitted with the paddle attachment, beat 2 eggs, add 1 1/2 cups granulated sugar and 1 tsp vanilla extract. Mix together until light. Pour contents into flour mixture and mix by hand. You may need to add up to an additional cup of flour, depending on your altitude and season of the year. Roll the dough into 3 small balls. Place each ball between two pieces of waxed paper and roll out into a 'sheet' of dough. Place in the freezer for one hour. Remove and cut out shapes. Place shapes on cookie sheets lined with parchment paper and bake at 350 degrees for exactly 10 minutes.
  • Decorate with your favorite icing or frosting. I typically use royal icing but depending on the shape or design I am creating I may use buttercream also!
