1 lb walnut halves (or other nut)
1/2 C Sugar
2.5 T corn oil
.5 t salt
.25 t pepper
.25 t Cayenne
1.25 t cumin
.25 t coriander
.5 t ground ginger
.25 t ground cloves
.5 t chili powder

Steps:

  • 1) preheat to 325° F. 2) Blanch nuts in boiling water for 1 min and drain well 3) while still hot put in bowl. Toss with sugar\oil. 4) let stand 10 min 5) Arrange in a single layer on a rimmed baking tray 6) Bake for 30-35 min turning every 5-10 min. 7) when brown and crispy put nuts in a bowl. 8) combine the seasonings and toss with the still-warm nuts. 9) spread nuts in a single layer to cool completely 10) store in airtight container.
