Curry Chickpea Salad image

Quick and easy chickpea salad - makes a great lunch option and gets better as it sits and marinates over a couple of days.

6 tablespoons water
1 tablespoon olive oil
1 teaspoon honey, or to taste
1 teaspoon curry powder, or to taste
1 dash salt
1 dash ground black pepper
1 (15 ounce) can chickpeas, drained and rinsed
1 medium red bell pepper, chopped
1 medium orange bell pepper, chopped
1 medium yellow bell pepper, chopped
¼ cup raisins

Steps:

  • Mix water, olive oil, honey, curry powder, salt, and pepper in a medium bowl. Add chickpeas, bell peppers, and raisins. Mix to coat.
