DAD'S PIZZA image

Yield Makes 2 large pizzas

Grated Cheese
Whatever toppings you want
DOUGH
2 Tablespoons active dry yeast
2 cups lukewarm water
4 teaspoons sugar
2 Tablespoons oil
1/2 teaspoon salt
1/2 cup wheat germ
4 cups flour
SAUCE
6 oz tomato paste
16 oz tomato sauce
2 teaspoons honey
1 1/2 teaspoons oregano
1 bay leaf
1 teaspoon basil
1 teaspoon salt
1 teaspoon olive oil
1 teaspoon anise seed
1 clove garlic, finely chopped

Steps:

  • DOUGH Add lukewarm water to a large mixing bowl. Sprinkle in yeast. Stir in sugar. Let sit 10 minutes or until mixture is bubbly. Add oil. Add salt, wheat germ and flour (1/2 cup to 1 cup at a time) to make a moderately stiff dough. Knead about 5 minutes. Let dough rise in covered bowl til double. Divide in half and use floured rolling pin to roll dought onto GREASED pans/cookie sheets. SAUCE Combine all ingredients in a pan and heat over medium burner, stirring as needed, about 10-15 minutes. Allow to cool before adding to crust. ASSEMBLY Preheat oven to 450 degrees. Spread sauce over dough. Add toppings: onions, tomatoes, olives, mushrooms, browned Italian sausage, pepperoni -- whatever. Top with grated cheese. Bake for 10-15 minutes, until cheese just starts to brown.
