Curried Pea Soup image

This is another recipe from the May 13, 1980 Woman's Day, "The Collector's Cookbook" that I found in my mother's recipe drawer. It sounds wonderful to me!!

Categories     Vegetable Soup

Number Of Ingredients 8

1 pkg 10 oz frozen green peas, thawed
2 Tbsp butter, softened
1 small onion, cut up
1 clove garlic, halved
2 - 3 tsp curry powder
1/2 tsp dry mustard (or 1 tsp prepared)
2 c chicken broth, divided
to taste salt and pepper

Steps:

  • 1. In a blender or food processor whirl peas, onion, garlic, curry powder, mustard, 1/2 cup broth, salt and pepper until smooth.
  • 2. In saucepan combine puree with remaining 1 1/2 cups broth and the butter.
  • 3. Simmer 10 to 15 minutes to heat through and blend flavors. Makes 4 servings.
