CURRIED APPLE SOUP image

Number Of Ingredients 7

4 T butter
6 apples, peeled, cored and sliced
Large onion, diced
4sprigs thyme
1t curry powder
6 cups chicken stock
Salt and pepper

Steps:

  • Saute apples, onions and thyme in butter, about 15 mins. Stir in curry powder and mix, about 30 secs. Pour in stock and bring to a boil. Simmer until apples are very tender, about 25 minutes. Cool slightly. Puree until smooth. Serve with a spoonful of sour cream.
