CUBAN BANANA BREAD image

1 1/2 cups sifted all-purpose flour
1 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 stick unsalted butter
1 teaspoon vanilla extract
1/2 cup dark brown sugar
1 egg
1 cup bran cereal (not flakes, such as Kellogg's All-Bran)
3-4 medium bananas (1 1/2 cups mashed)
2 tablespoons water
1/2 cup raisins
1 cup walnuts, chopped

Steps:

  • 1. Adjust rack in bottom third of oven and preheat oven to 350 degrees. Butter 10 1/4-by-3 3/4-by-3-inch loaf pan and dust with dry bread crumbs. 2. Sift together flour, salt, baking powder and baking soda; set aside. In large bowl of electric mixer, beat butter until soft. Add vanilla, then sugar, and beat until well mixed. Add egg and beat until pale in color. Add bran cereal and beat just to mix. 3. Coarsely mash bananas. Add water to bananas and stir into bran mixture. Add raisins and nuts and beat only to mix. Then, on low speed, add sifted dry ingredients, scraping bowl with rubber spatula. Do not overbeat. Turn mixture into prepared pan and smooth top. 4. Bake 1 hour, or until cake tests clean.
