Steps:
- 1. Grease a 9-inch pie pan. Microwave asparagus pieces until cooked.
- 2. Beat all six eggs and reserve 1/4 cup.
- 3. Combine eggs, 2 cups mozzarella, garlic, salt, pepper, and spinach. Pour into prepared pie pan.
- 4. Layer asparagus on top of egg mixture in pan. Pour reserve 1/4 cup egg on top. Sprinkle remaining 1/4 cup mozzarella and parmesan cheese on top.
- 5. Bake at 375 degrees F for about 30 minutes or until edges start to brown.
