Crunchy SuperFood Breakfast Parfait image

1 cup coconut or almond milk
3 tablespoons chia seeds
1 tablespoon agave nectar
1/2 tablespoon cracked flax
1/2 tablespoon cracked hemp seeds
1 teaspoon pure vanilla extract
Blueberries, pomegranate seeds or other fresh fruit or berries
Granola, raw oats, nuts or honey, for garnish

Steps:

  • Combine the coconut milk, chia seeds, agave nectar, flaxseeds, hemp seeds and vanilla in a medium bowl, and let sit for 10 minutes, whisking every couple of minutes. The mixture will start to set like gelatin. Place some fruit in a parfait glass, add the milk mixture and let sit in the refrigerator overnight. Top with granola, raw oats, nuts or honey.
