~ Crunchy Salmon Patties ~ image

Love experimenting with salmon patties. I have never made them the same twice. Enjoy!

Number Of Ingredients 16

14 oz can salmon, drain and remove bones
salt & pepper to taste
1 lightly beaten egg
2 1/2 - 3 Tbsp finely minced onion
2 Tbsp yellow corn meal
1 1/2 Tbsp buttermilk
4 1/2 Tbsp flour
1 Tbsp mayonnaise
1/2 tsp dried dill
oil for frying
OPTIONAL SAUCE
1/3 c plain yogurt or sour cream
1/3 c finely diced cucumber - squeezed of excess water
1/8 tsp dried dill
1 clove crushed, minced garlic
pinch or 2 of salt

Steps:

  • 1. In a bowl, mix salmon, egg, buttermilk, seasoning, flour, mayonnaise, cornmeal and onion. Mix well. I
  • 2. In a cast iron skillet, heat about 1/4 cup oil. Drop salmon mixture by tablespoonfuls into hot oil and flatten some with back of spoon. Fry for about a 1 1/2 minutes per side or until desired crispiness. Drain on paper towels. Season with additional salt now, if preferred.
  • 3. If making sauce, combine everything, mixing well and keep refrigerated until ready to use. Can double recipe if you want more sauce.
