Doing a little experimenting to see exactly what I can and cannot eat. This is hard! my husband liked the salad, but complained that it needed Ranch dressing.

Steps:
- 1. Shred your chicken or cut it into little chunks. Slice the celery and red onion, peel and dice the cucumber.
- 2. Place the chicken, celery, cucumber and red onion in a bowl. In a small bowl stir together the vinegar, salt and pepper. Pour over the chicken and veggie mixture and stir to coat the chicken and veggies.
- 3. Divide the salad mix in half, and place on two plates. Divide the chicken and veggie mixture in half and place on top of lettuce.
