Crunchy Chicken Salad image

Doing a little experimenting to see exactly what I can and cannot eat. This is hard! my husband liked the salad, but complained that it needed Ranch dressing.

Number Of Ingredients 8

8 oz shredded oven roasted chicken
1 stick celery
1/2 large cucumber, peeled and diced
2 oz red onion, diced
2 c packed salad greens
DRESSING
1/4 c white vinegar
salt and pepper to taste

Steps:

  • 1. Shred your chicken or cut it into little chunks. Slice the celery and red onion, peel and dice the cucumber.
  • 2. Place the chicken, celery, cucumber and red onion in a bowl. In a small bowl stir together the vinegar, salt and pepper. Pour over the chicken and veggie mixture and stir to coat the chicken and veggies.
  • 3. Divide the salad mix in half, and place on two plates. Divide the chicken and veggie mixture in half and place on top of lettuce.
