Crunchy Caramel Apple Pie image

On a Christmas Morning a few years back, our doorbell rang. It was a good friend that had worked with my husband, played racquetball with him. In his hands was a pie. Turns out that the pie was a prize winner for a lady in 2001.This is the recipe for the pie that Jim brought to us straight from the oven... Glory, what it does...

Number Of Ingredients 14

1 pastry crust, 9 inch, deep dish (homemade or store bought)
1/2 c sugar
3 Tbsp all purpose flour
1 tsp ground cinnamon
1/8 tsp salt
6 c thinly sliced peeled apples (your choice, i like golden delicious and fuji)
1 recipe crumb topping (see below)
1/2 c chopped pecans
1/4 c caramel topping
INGREDIENTS FOR CRUMB TOPPING
1 c packed brown sugar
1/2 c all purpose flour
1/2 c quick cooking rolled oats
1/2 c butter

Steps:

  • 1. Directions for crumb topping: Stir together brown sugar, flour, oats. Cut in 1/2 c butter until topping is coarse crumbs. Set aside.
  • 2. Directions: In a large mixing bowl, stir together the sugar, flour, cinnamon and salt. Add apple slices and gently toss until coated. Transfer apple mixture to the pie shell.
  • 3. Sprinkle crumb topping over apple mixture. Place pie on a cookie sheet so drippings don't drop into your oven. Cover edges with aluminum foil to prevent burnt edges.
  • 4. Bake in a preheated 375 degree oven for 25 minutes. Remove foil and bake another 25-30 minutes.
  • 5. Remove from oven. Sprinkle pie with chopped pecans and drizzle caramel on top. Cool on a wire rack for as long as you like (or as long as you can resist temptation...) Enjoy warm or at room temp.
