1 1/2 cups vegan cream cheese
1 1/2 tablespoons vodka
1 teaspoon lemon juice
1 teaspoon finely chopped fresh dill
1/4 teaspoon salt
1 cucumber
6 radishes, trimmed
6 stalks celery
1 head Belgian endive, trimmed and leaves separated
1 tablespoon chopped fresh chives

Steps:

  • In a small bowl, combine cream cheese, vodka and lemon juice. Stir in dill and salt.
  • Trim vegetables into bite sized pieces.
  • Arrange cut vegetables on a platter with cream cheese in the center. Garnish with chopped chives.
