Crock Pot Turkey White Bean Pumpkin Chili image

Number Of Ingredients 19

cooking spray (I used my Misto)
2 lbs lean ground turkey
1/2 teaspoon olive oil
1 small onion, chopped
3 garlic cloves, minced
1 teaspoon chili powder, to taste
2 bay leaves
2 teaspoons cumin
1 teaspoon oregano
navy beans, rinsed and drained (I added kidney beans and pigeon peas)
15 ounces pumpkin puree (not pumpkin pie filling)
4 1/2 ounces canned chopped green chili peppers (didn't add this because I didn't have it)
2 cups fat-free low-sodium chicken broth
fat free sour cream, for topping (optional, or Greek yogurt!)
chopped cilantro, and chives for topping (optional)
salt and pepper
1 stalk celery (optional)
1 large tomatoes (optional) or 1 (15 ounce) can stewed tomatoes (optional)
2 tablespoons flax seeds (optional)

Steps:

  • I simply added all ingredients to the crock pot.
  • Set it for 8 hours. Enjoy!
