Crock Pot Crown Royal Ginger Pork Chops image

I bought some thin-cut pork chops on sale and now had to come up with something interesting to do with them. So I put on my creative hat, searched the pantry and this is the result - a little spicy, a little sweet and very savory. Hope you like them!

Number Of Ingredients 16

1 large onion, sliced thin (i used a mandolin)
2 tablespoon(s) olive oil, drizzled over onions
4 - thin cut boneless pork chops
2 teaspoon(s) cornstarch, sprinkled over chops
2 teaspoon(s) garlic, minced
1/2 teaspoon(s) crushed red pepper flakes
1 teaspoon(s) ginger powder
2 tablespoon(s) brown sugar (i used splenda brown sugar)
3 tablespoon(s) soy sauce
3 tablespoon(s) balsamic vinegar
1/4 cup(s) ginger liqueur
1/4 cup(s) crown royal whiskey (or similar quality)
1 cup(s) beef broth
8 ounce(s) pasta of choice, uncooked (i used small shells)
- salt and pepper, to taste
- cooking spray

Steps:

  • Spray crock pot with cooking spray.
  • Place all ingredients, except pasta, in crock pot in order listed. Cook on high for 4 hours or until pork chops are fork tender and juices run clear.
  • One half hour before end of cooking time, carefully remove pork chops from crock pot. Stir all ingredients and add pasta, ensuring it is covered by liquid. Add additional beef broth or water to cover, if necessary. Return chops to crock pot and continue to cook 30 minutes on high until pasta is tender. Plate chops on top of pasta and enjoy!
  • NOTE: For those of you who do not cook with spirits, replace the whiskey and ginger liqueur with 1/2 cup beef broth, 2 Tbsp of lemon juice and an additional 1/4 tsp ginger powder.
