Crock Pot Chipotle Ham And Bean Soup image

A favorite Ham and Bean Soup is Crock Pot Chipotle Ham And Bean Soup. A great use for leftover ham bone. A super simple and a low cost meal.

Number Of Ingredients 14

1 pound Dry Great Northern or Small White Beans, Soaked Overnight
3 pounds Ham Hock Or Smoked Meaty Ham On Bone
1 whole Medium Onion, Diced
5 whole Large Carrots, Diced
4 stalks Celery, Chopped
5 cloves Garlic, Minced
1 whole Chipotle Pepper In Adobo Sauce, Chopped add 1-2 more for spicier
1 tablespoon Adobo Sauce From Chipotle Pepper
1 teaspoon Thyme
1 teaspoon Rosemary
1 teaspoon Granulated Garlic
2 cups Chicken Broth
4 cups Water
Salt and Pepper, To Taste

Steps:

  • Sort beans. Remove any pebbles, broken, or shriveled beans. Cover with at least 2" of water and soak overnight.
  • Add soaked beans, ham, celery, carrots, chipotle Pepper, adobo sauce, onion, garlic, rosemary, garlic powder, chicken broth, and water to Crock Pot.
  • Taste soup. Salt if needed and pepper to taste.
