- 1. Parboil the potatoes, about 10 mins.
- 2. Drain, add the butter and oil to a skillet and put potatoes in.
- 3. gently toss, add salt and pepper..keep tossing till crispy on the outside and tender on the inside about 5 mins. on med-high.
