CRISPY CORNFLAKE-CRUSTED FISH image

Number Of Ingredients 7

1 pound cod or flounder (4 oz per serving)
1 1/2 cups cornflakes
1/4 teaspoon paprika
1/8 teaspoon cayenne pepper
1 whole egg
1 egg white
1/8 teaspoon ground black pepper

Steps:

  • Preheat oven to 325 degrees F. Spray a baking dish with a non-stick cooking spray. In a resealable plastic bag, crush the cornflakes. Add paprika, cayenne pepper and black pepper. Put the mixture in a shallow dish. In another shallow dish, use a whisk to combine the egg and egg white. Pepper the fish. Dip the fish in the egg mixture and then dredge in the cornflake mixture. Bake for 15 to 18 mintues, or until the fish is opaque and flakes with a fork.
