On one of my many cookbook /recipe searches , I found a cookbook called Americana Cookery. I liked the name , but I loved some of the recipes in it even more. Thought I might place some of them here for safe keeping and to share

Number Of Ingredients 10

2 lbs fresh haddock fillets
1 1/2 cups fresh tomatoes, chopped
1/2 cup green pepper, chopped
1/3 cup lemon juice
1 tablespoon cooking oil
2 teaspoons salt
2 teaspoons dry onion flakes
1 teaspoon basil leaves, crushed
1/4 teaspoon pepper, coarse
1/8 teaspoon hot sauce

Steps:

  • Preheat oven to 500*.
  • Place fillets in baking dish.
  • Combine tomatoes, green peppers, lemon juice, oil, salt , onion flakes, basil leaves, pepper, and hot sauce.
  • Spoon tomato mixture over fillets.
  • Bake fillets for 5 -8 min or until fillets flake easily.
  • Place fillets on a warm platter.
  • Garnish with tomato and green pepper rings.
